I am currently at the University of Montreal with a 2-year study permit. I am currently pondering the following question: If I stop my current studies to work directly, what are the steps to follow? Should I apply for a work permit now? What is the deadline, etc.? Thanks !

If you stop your studies to work, indeed, you will need to apply for a work permit. You’ll have to apply for a closed work permit and get sponsored by an employer.
